How to Cut A Chicken in Half with a Knife

All the cooking shows show you to use poultry shears to cut chickens in half, but I’ve never met a pair of shears that I wanted to use more for more than 1 or 2 birds at a time. For farmers, creating value-added cuts from their pasture-raised meat birds, you can cut dozens of chickens in half and then into quarters or into an 8-piece with bone-in breasts using nothing more than a simple 6″ boning knife.
