How to Cut-Up A Chicken Using a Knife

In the premiere episode of the Pastured Poultry Kitchen, Mike demonstrates a little known technique to cut a chicken in half with nothing more than a boning knife. No saw, no shears required.

Using this method, I could cut dozens of chickens into halves, quarters, or 8 pieces with bone-in breasts. I did as many as 125 in a day.
